Popcorn_Recipe_Chili_ManchegoIt’s National Popcorn Day! But let’s be honest, pretty much every day is national popcorn day. We never really need an excuse to whip up a batch this perfect couch-time snack. It’s light, it’s crunchy, it’s easy to make, and it’s oh so satisfying!  This is probably why we’ve all been eating it since we were kids, and most likely in the same exact way every time.  But as our palates have expanded, so should our snacking repertoire. Here’s a fun recipe that’ll give your popcorn a little kick in the kernels. Happy popping people!

½ cup popcorn kernels
¼ cup fine grated manchego
1 tablespoon lime zest
½ teaspoon chili flake
1 teaspoon garlic powder
3 tablespoons olive oil

Directions

Combine garlic powder, manchego, and lime zest in a food processor and pulse until fine. Spread out the mixture on a parchment-lined sheet pan and let sit uncovered for one hour to allow excess moisture evaporate.

In a large pot over medium heat, cook olive oil and chili flakes until fragrant. Add popcorn kernels and place lid on top; agitate the pan until the kernels are fully popped and you can count three seconds between pops. Remove from heat, pour into a bowl, and toss with cheese blend.
