Serrano Ham and Red Wine Onion Jam Tapas Recipe
This tapas dish is jam-packed with flavor (pun intended)! Our recipe for Serrano Ham with Red Wine Onion Jam when accompanied with some crostinis is lovely for entertaining. But it can also be a lazy dinner for two when you throw in a few hunks of good cheese and a big glass of Spanish wine.
¾ lb Serrano ham, sliced thin
4 cups white Spanish onions
3 cloves garlic minced
¼ cup sugar
2tbs olive oil
2tbs butter
½ cup red wine
1 baguette
Directions
Preheat oven to 350. Slice baguette into ½” pieces and brush lightly with olive oil. Bake for 10 minutes until golden brown.
Heat a skillet over medium heat. Chop 1/3rd of ham and add to pan. Cook until fat is rendered and ham is crispy. Remove ham and add butter, olive oil, onions and a hefty pinch of kosher salt. Sautee while stirring until onions turn translucent, then add sugar and red wine. Reduce heat to medium-low and continue to cook, stirring occasionally, until onions caramelize into a jam-like consistency, about 20 minutes.
Serve jam on crostinis sprinkled with crispy ham pieces.
Suggested wine pairing: Sangenis I Vaque Coryana, 2001, $35
