Thanksgiving Breakfast: Pumpkin Doughnuts (Regular and Gluten-Free Recipes) + Apple Cider Mimosa 2560 2560 Arianna Negri

Let’s be honest, breakfast on Thanksgiving morning is often overlooked. When the focus of the day is serving up a 12 pound turkey at 3:00PM, Thanksgiving breakfast can seem underwhelming.

Luckily, that no longer needs to be the case thanks to the perfect fall breakfast combination: Apple Cider Mimosas and Pumpkin Donuts! These recipes will have the whole family feeling very thankful.

Pumpkin Donuts

Servings: 12 donuts
Prep Time: 20 Minutes
Cook Time: 60 Minutes

Ingredients

1 ½ cups all-purpose flour  
1 tablespoon of cinnamon  
1 teaspoon baking powder  
¾ teaspoon baking soda
½ teaspoon nutmeg  
¼ teaspoon ground cloves  
¼ teaspoon salt  
3 ripe bananas  
1 egg
1 ¾ cup of 100% pureed pumpkin  
2 teaspoons of maple syrup  
1 teaspoon of vanilla extract  
3 tablespoon coconut oil, melted  
¼ cup cane sugar
2 tablespoons of cinnamon  

Instructions  

  1. Preheat the oven to 400 degrees Fahrenheit and grease a silicone donut pan 
  2. In one bowl, combine the flour, cinnamon, baking powder, baking soda, nutmeg, ground  cloves, and salt  
  3. In another bowl, use a fork to mash the three bananas  
  4. Then, add in the egg, pumpkin puree, maple syrup, and vanilla extract 
  5. Use an electric mixer to thoroughly combine the ingredients  
  6. Next, slowly sift in the dry ingredients, using an electric mixer to combine 
  7. Pour the batter into the prepared donut pan and bake for one hour  
  8. Allow the donuts to cool for at least 30 minutes after removing them from the oven 
  9. In one bowl, melt the coconut oil and in another bowl combine the cane sugar and  cinnamon  
  10. Dip each side of the donut in the melted coconut oil, then dust with the cinnamon sugar   
  11. Repeat for all the donuts, then serve and enjoy!

Gluten-Free Pumpkin Donuts

Servings: 12 donuts

Cook Time: 60 Minutes

1 ½ cups gluten-free baking flour
1 tablespoon of cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon nutmeg
¼ teaspoon ground cloves
¼ teaspoon xanthan gum
¼ teaspoon salt
3 ripe bananas
1 egg
1 ¾ cup 100% pureed pumpkin
2 teaspoons of maple syrup
1 teaspoon of vanilla extract
3 tablespoon coconut oil, melted
¼ cup cane sugar
2 tablespoons of cinnamon

Instructions
