Carrot Cake Oatmeal

Ingredients:
- 1 cup grated carrot
- 1 cup old-fashioned oats
- 2 cups unsweetened oat milk (can substitute regular or other non-dairy milk of choice)
- ½ teaspoon vanilla extract
- Pinch kosher salt
- 1 teaspoon cinnamon
- Dash ground nutmeg
- 2 tablespoons honey
- ¼ cup chopped walnuts
- Toppings: raisins, coconut shavings, walnuts, cinnamon, sliced bananas
Preparation
- In a medium saucepan over medium heat, combine the carrots, oats, milk, vanilla, salt, cinnamon, honey, and nutmeg.
- Bring to a simmer, stirring regularly, and cook, uncovered for 5-8 minutes, until thick and creamy. Stir in the walnuts.
- Serve immediately with toppings of your choice.
