Carrot Cake Oatmeal

  • 1 cup grated carrot
  • 1 cup old-fashioned oats
  • 2 cups unsweetened oat milk (can substitute regular or other non-dairy milk of choice)
  • ½ teaspoon vanilla extract
  • Pinch kosher salt
  • 1 teaspoon cinnamon
  • Dash ground nutmeg
  • 2 tablespoons honey
  • ¼ cup chopped walnuts
  • Toppings: raisins, coconut shavings, walnuts, cinnamon, sliced bananas


  1. In a medium saucepan over medium heat, combine the carrots, oats, milk, vanilla, salt, cinnamon, honey, and nutmeg.
  2. Bring to a simmer, stirring regularly, and cook, uncovered for 5-8 minutes, until thick and creamy. Stir in the walnuts.
  3. Serve immediately with toppings of your choice.
