This is not an actual recipe, but rather a fun way to serve simple vanilla ice cream. This method works well with the simplest of ice cream flavors such as cream or vanilla, since the flavor of olive oil and salt will be predominant. The trick is to use the best quality extra virgin olive oil and coarse flakes of pink Himalayan salt. 

MakesL 1 portion


2 scoop of plain vanilla ice cream per portion

1 tbsp of extra virgin olive oil

Some flakes of himalayan pink salt


Scoop the ice cream into a cup and put the cup back in the freezer while you prepare the rest. 

Bash the salt flakes slightly to break the big chunks. Take the cup out of the freezer and drizzle with extra virgin olive oil and lightly sprinkle with some flakes of pink salt.

Serve immediately, preferably with dessert wine such as Castello di Meleto Vin Santo.
